Egg use

Those of you who bake: would you, perhaps, point me to your favorite recipes that use lots of eggs? I'm not going through eggs fast enough, and I'd like to rectify that. My favorite egg-use recipe, a chocolate pie with graham crust, only calls for 3 eggs, so far as I remember. When I get home and find it I'll put it up here by way of trade. Thanks!

My recipe for cheesecake cupcakes calls for 5 eggs if you make the plain version. To convert the pumpkin cheesecake recipe under the link back to plain, leave out the pumpkin and nutmeg+ginger+cinnamon+cloves, and add an egg.

The only other thing that springs to mind is quiche. At home I have a recipe for a breakfast quiche that involves pineapple and (optional) ham, but I don't recall how many eggs it calls for....

Awesome. Those sound like exactly what I want. They also sound like a heart attack in every bite. I'll have to see if we're having gaming this weekend...

Oo, and I bet I can add all sorts of spices to them. Since I moved, all my spices plus all the spices of 2-3 other people = a hell of a lot of spices. Mostly for savory dishes, but... (Rosemary cupcakes? Probably not. :) )

...and am amused to see that it only calls for 4 eggs. (Note: I've never actually made this one myself, but I got the recipe from a friend after I tried her very delicious version.)

Pineapple Brunch Casserole

Ingredients:
1 8-oz can crushed pineapple, drained
1 c. Bisquick
1 c. milk
4 eggs, lightly beaten
6 T. butter or margarine, melted
1 t. prepared dijon mustard
1/2 t. onion powder
pinch nutmeg
4 oz. cooked ham, diced (optional - the version I had left it out)
1 c. shredded Monterey Jack or Cheddar Cheese (or 1/2 c. of each)
2 green onions, finely chopped

Directions:

Preheat oven to 350. Reserve 2 T. pineapple for garnish if desired. Combine Bisquick, milk, eggs, butter, mustard, onion powder and nutmeg in large mixer bowl until smooth. Stir in ham (if desired), cheese, onions and pineapple. Pour into 9-inch pie plate. Bake 35-40 min until set. (Optional: sprinkle a little extra cheese on top about 5 minutes before it's done.)

I don't have any recipes, but it occurs to me that quiche and crepes are both pretty egg-heavy.

I'm a big fan of egg salad sammiches.

Don't know if it's the sort of thing you're thinking of, but if I feel like I should burn through a lot of eggs quickly, my recipe of choice is mu-shu pork pizza, which calls for a half-dozen eggs....

I love my eggs...

- curried egg salad

- protein pancakes

- crustless quiche, which surprisingly only uses 2 eggs, though I have added 3 and it's just as good

- deviled eggs

...but then, I like them just scrambled, with salt, pepper, and a bit of cheese.

On an entirely different note, do you and J mind if I use the Pit of Vipers system in a game I run at ACNW this year? I was thinking of a kids boarding school setup, and I loved the Pit of Vipers, and what chargen would be more appropriate...
